Idaho contributes to almost one third of all of the potatoes produced in the United States. 62 percent of all Idaho potatoes are used to make processed food products like frozen and dehydrates, 29 percent are shipped fresh and 9 percent are grown for certified seeds. The top three varieties of potatoes from Idaho are Russet Burbank with 51.3 percent, Russet Norkota with 16.7 percent and Ranger Russet with 13.1 percent.
